Default Transfering Real Estate in Probate

We are in the process of probate my mother-in-laws estate and I've been told that you cannot transfer the Real Estate (her Home) until after probate is closed /finalized. Is this correct or can the deed be change before probate is finalized? Is this also true if she was holding a note for a business that she sold? Can the note be assigned prior to closing the estate or is it required to be closed after finalization of probate.
