Will vs. payable on death accounts
I am single, no children. My will states that everything be divided between my three siblings. Can I put another person's name as payable on death on some (but not all) of my bank accounts? I have not assigned anybody as payable on death on ANY of my accounts as of yet. This forth person is NOT in my will. Can my siblings who ARE in my will contest this after my passing?

Such accounts will often be outside the will and you can do that yes.
