Confused New Jersey, Is it wise to accept a plea bargin in traffic court, if I am not guilty?

New Jersey, I would like to take my ticket to court and plea not guilty because I did not make a U-turn where the police officer said I did. However, I know from past experience that I will be offered a lower charge. I do not know about the traffic court these days, it has been more than 13 years since I got a ticket.
Is it better for me to take what the court offers me? Or, should I take this matter all the way? Can someone please give me some sound advise on what could happen to me if I take this to court. I feel the judges are there to side with the officers. I have been in court rooms many times and wittnessed this to that effect.

You always have a chance of prevailing whenever you reasonably challenge a ticket.
