Probate, Death Tax, Joint Tenancy.. HELP!

I've read before that when writing up a will, probate can be avoided. If I understand correctly, probate is expensive, timely, and unnecessary. But with a living trust, I run into the problem of the Death Tax! Furthermore, I know that all these taxes/laws vary by state, and I'm planning on relocating my family from San Diego to Tampa Bay soon.

This San Diego lawyer (www.walterstrustinfo.com) has a lot of information about trusts for California residents, and this Florida attorney (www.floridaestateplanninglawyerblog.com) deals with probate, etc. in Florida, but what if I'm moving from one state to another?

Does anyone know how the rules apply for those who are no longer a resident of one area, but not yet a resident of another?
