international nonprofit
I see how I can registered in all 50 states. How do I register "internationally"? Do I have to pick specific countries and look up their rules? Similarly, how do international nonprofit laws differ from US laws?

You normally do not need to register internationally unless you want contributions to be tax deductible in that specific country. In that case you often do need to set up a company or subsidiary in that country and get government approvals just as you do in the USA. Or get an exemption etc. due to good standing in the USA.
