Angry claim money back

employee has quit but had borrowed money from me in the form of a loan was paying wkly £62.50. but not anymore. the sum borrowed was 1000 and final figure was 1250 she has only paid 437.50.
what process should i use to attempt to get my money back.
regards , as this was a loan agreement made with me(employer) and her(ex-employee).

Sue in small claims it would seem, for the entire amount or any payments past due.
