Default Collections, Canada: I want to sue for the stress and damage caused

I won an Ontario Canada labour dispute with my former employer. While still working there, he was taking pay off my cheques without my agreement for bogus mileage on a company car that I proved was not mine. I won my case, and my former employer agreed to pay back what he took (was forced to) but never removed me for collections for the amount.

I even have text message conversations in which he states he will absorb any amount still outstanding in this matter.

He has ruined my credit, and now I want to sue for the stress and damage this has caused. Could I? And could I win?

You could sue in small claims or other court for the costs of removing and resolving the credit issue.
Also, send the agencies a copy of the court or agency judgment with an explanation--they should remove the issue.

It is not likely you will be able to sue for too much more.
