Default US law govern China contract?

Can we sign a contract with a Chinese firm but have US law govern the contract--say e.g. New York law?

Yes you can but it will always be subject to a review by Chinese officials as well if a dispute occurs, and they could in theory override your choice. So it is a good idea to have enforcement mechanisms that you can rely on--letters of credit, escrows etc. as well.
