I was told 72 hours after they are handed the case they have to give the case to the Grand jury 72 hours after you have been arrested

What state are you talking about? That makes a difference. About half the states use the grand jury process and each makes its own rules. In some states grand juries meet at regular times, set by statute, and in others are empanelled upon need.
