My Fault
If I am responsible for hitting someone and want to settle this without involving my insurance company. Should I pay the person I hit for the damages in the form of a check or should I arrange for payment to go direclty to the auto body shop?

Either but make sure they sign a release saying that you are fully resolved and that no action can be taken further.
