Confused disclosing personal info

I want to buy my first home but the mortgage company ask me to sign a document for them to have unlimited access to any and every piece of my personal information they may want and I am uncomfortable with this as they may be prejudiced with some things. Am I legally protected from this and do I need to sign this even when I don't want to. I am afraid that I may not get this house that I want even though my offer was accepted and I do have the meens to re-pay the loan. I feel that they should not have asked for the UN-limited disclosure in the first place. I was told that I am to pay for mortgage insurance anyway. I understand questions pertaining to my ability to pay and faithfulness in paying but giving them permission to go other places is not acceptable. What if I am told that they may not process or approve it and not let me close as they have led me to believe. I am already angered. They may not want to approve the loan for any reason what so ever. Isn't there some law that states that they can not discriminate? We know that people do discriminate even when they are not supposed to and I just don't want to assist in that process. Please help me with this.

You could sue them for any misuse but you may want to try a few other lenders and see if you like their tone better.
