Default Maximum interest on unpaid services rendered

Contract stipulates unpaid money on services rendered will accrue interest at the maximum rate allowable by law.

Contract signed in and for a project in the state of Florida. Unpaid amount 75,000.00.

I can find info on maximum rates allowed by the state for money loaned but not for unpaid services rendered.
